Iberian ham shoulder (paleta). Average leg weight: 4.5 - 5 kilos.The jamón ibérico is pork raised humanely on our farm in a village in Castilla y León. We cured the ham for many years. This particular product is one of the front legs, or shoulder paleta, pieces from the Iberian pig. The animal was fed an all-vegetarian diet, but was not fattened on acorns.
A sold-wood holder.
San Jamón supplies the cutting knife from the famous Cuperinox factory in Albacete. The shape of the cutting blade, long, thin, narrow and sharp, allows for close cutting. The flexibility will allow you to follow the shape of the ham. A wood handle adds an elegant touch.
